The best chocolate cookies I have ever had. I used the Dark Chocolate Lover’s chocolate bar from Trader Joe’s.
I got the recipe from Costco Connection.

1/4 cup coconut oil
3/4 cup chocolate chips
2 tablespoons flaxseed meal
4 tablespoons water
3 tablespoons cocoa powder
1/2 cup coconut sugar
2 1/2 cups almond flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup toasted pecans, finely chopped

Combine coconut oil and 1/4 cup chocolate chips in a microwave-safe bowl; stir to combine. microwave 30 seconds. Add remaining ingredients, except the reserved chocolate chips and pecans, and mix well. Refrigerate for 30 minutes

Preheat oven to 350°F. Line a cookie sheet with parchment or use a silicone mat. Roll dough into 24 balls, place on the sheet and gently flatten. Bake 10 minutes and allow to cool.

Melt remaining 1/2 cup chocolate chips in a microwave-safe bowl. Dip the edges of the cookies in the melted chocolate, then chopped pecans. Makes 2 dozen.
