I have been wanting to make chia seed pudding for a couple of years now. I finally decided to create different types of chia seed pudding. All the recipes serves two.




Golden Milk Chia Seed Pudding
1 can full-fat coconut milk
1/2 cup chia seeds
1 Tbsp fresh turmeric
1/2 tsp fresh ginger
1/4 tsp black pepper
1/2 tsp Ceylon cinnamon
1/4 tsp cardamom
Blend coconut milk, turmeric, ginger, pepper, cinnamon, and cardamom in a Vitamix.
Combine coconut milk mixture with chia seeds in two bowls and refrigerate overnight.
Add the toppings of your choice.



Chai Chia Seed Pudding
1 can full-fat coconut milk
1/2 cup chia seeds
1/4 tsp black pepper
1/2 tsp Ceylon cinnamon
nutmeg to taste
1/4 tsp cardamom
1 star anise
1 clove
half bay leaf
Blend coconut milk with all the spices in Vitamix. Combine it with chia seeds in two bowls and refrigerate overnight. Top with berries.


Chocolate Chia Seed Pudding with Blueberries and Grain free Granola
1 can full-fat coconut milk
1/2 cup chia seeds
2 tbs Valrhona cocoa powder
1/2 tsp Ceylon cinnamon
nutmeg to taste
1/4 tsp cardamom
Blend and chill. Top with blueberries and granola.

Green Tea Chia Seed Pudding
1 can full-fat coconut milk
1/2 cup chia seeds
2 tsp green tea powder
Blend and chill. Top with blueberries.

Saffron Rose Water Chia Seed Pudding with Peach
1 can full-fat coconut milk
1/2 cup chia seeds
A pinch of saffron
splash of rose water
1/4 tsp cardamom
Blend and chill. Top with peach.
