When I read that Seylou a new bakery was going to mill local whole grains right in their bakery in order to make hearty, nutritious bread in wood burning oven, I was beyond excited. Specially reading that one of the owners, Jonathan Bethony, worked at the Washington State University’s Bread Lab. We first stopped in the morning to try their croissants. I was told that their bread was coming out at 1:00 p.m. When we walked in, we assumed there was a short line but we were so wrong. The line was stretched throughout the shop. There must have been at least forty people in line!! An old guy behind us said, “it better be worth it”. I am sure he was satisfied. The place has been only soft open a few short days and their normal hours started the weekend we visited, so I don’t know how all these people found out about the bakery. I guess everybody is as hungry as me for a delicious, nutritious bread and baked goods.

I did not know what to expect and was blown away with the complex earthy, buttery delicious taste of this croissant. At $4.75 higher than most croissant but non of them have the complex delicious taste.
Whole Grain Cheddar and Jalapeño Scone
A very hearty delicious scone with plenty of cheese and enough Jalapeño.
Mischbrot 100% freshly milled whole wheat flour, rye, buckwheat
A very good bread but because it was so moist, it was a nightmare to slice. It was worth it though. Very earthy and crusty bread.
Horse Bread Whole wheat, sorghum, millet, legumes, camelina seeds and mustard seeds
I loved this bread. So nutty, earthy and delicious. The crust was really good also.
Whole Wheat Coffee Éclair
It was a little flatter than usual. The coffee filling was really good.
This must be one of the best if not the best almond croissants I have ever had. It is the healthiest and the tastiest for sure. It smelled amazing also. I have to ask them what is in the middle besides almond paste that tastes so good.
